Unfortunately, freeze-dried plants change their shape and color within weeks of being freeze-dried. For example, the strawberry on the left was photographed just after it came out of the freeze-dryer.

The photo on the right shows the same strawberry a month later.

With time, freeze-dried plants tend to shrink and discolor; whereas freeze-dried meats don’t.
